A few months ago, a friend of mine told me about this thing in Texas where you can go in a helicopter and shoot wild boars with a machine gun. https://www.helibacon.com/is one example of this. He also jokingly said he'd bring a pig back for me to prepare and cook. The joke is that these animals are not edible. However, this story inspired me, so today I attended a class at ICC about cutting and prepping a pig, as well as what to look for in a butcher shop when buying certain cuts. I learned so much that next month, I'm going to make some sort of pork dish for my friends.
